PhD in biltong making started by testing the effect of Rooibos on droëwors

Dr Maxine Jones is the first person to receive a PhD for research on how to make good quality biltong. Her research path crossed with biltong during her MSc studies at Stellenbosch University where she tested the addition of Rooibos extract to droëwors as a natural antioxidant in an effort to increase the shelf-life of the product.
