Audacia uses Rooibos to create preservative-free red wine

At Audacia, a winery outside Stellenbosch, red wine is made by using Rooibos and Honeybush wood instead of traditional oak during the fermentation process. The antioxidants in Rooibos and Honeybush protect the wine and eliminate the need for preservatives. The power of these antioxidants to preserve the wine has been confirmed by research undertaken at Stellenbosch University's Department of Viticulture and Oenology.
